Z offset troubles

I just bought a pre-built voron 2.4 3x500. Previous owner didn't build it either but he did show me it was printing before I took it. It is a Voron 2.4 500x500x500 with stealthburner toolhead and bambu x1c hotend. Has a Klicky type probe. Everything appears to be working however I cannot get the Z offset correct. When running the Z offset calibration, I am not sure it is actually saving correctly. The probe sits behind the nozzle and hangs lower than nozzle. When I start a print, it just starts it at least 10mm off the bed and basically pushes plastic into thin air. Any help and suggestions would be much appreciated. Thanks.
 
It shouldn't save, its done on a print by print basis.

Its likely you're missing
zero_reference_position: 250, 250 from your [bed mesh]

Can you share your config for me to look at & I'll help you out.
 
Thanks for the assist. Appreciate it. I've attached the two config files I believe are needed for review. If you require anything else please let me know.

Also, I think I will be ditching the klicky probe. It is taking a long time to probe and level everything especially when it has to do it every single time. I am looking to fit the Beacon H probe. I can pick one up locally and found the correct mount I need to use with bambu x1 hotend for stealthburner. Might need some help with that later on as well.

Ive had a look and things look mostly alright, try that zero_reference_position & I *think* that'll get it. Let me know how you get on.

It was a long while ago I had to sort mine. Depending on how stable your mesh is you could do it every so often & load it in? My 350 only gets a bed mesh every other time I remember, until last week its been probably 500-600 print hours since its previous.
 
I did add the line to config. It doesn't seem to make a difference. Weird thing is that I did see it printing just fine. I don't know if the guy was doing something manually to get it to print for the demo but I am definitely not getting the same results with the machine. After many attempts going back and forth it seems that nozzle is lower now than when I started but ultimately still prints in the air. Something is off and I need to figure it out :/
