FORMBOT Voron Trident R1 Pro : Options to include/exclude ?

I am looking at building my first Voron but I am not a build-things newbie. I am an engineer with enough skills and tools to build a Voron from the plans. No plan to do that.
I am planning to buy a kit from Formbot China. I buy a lot of stuff from Aliexpress and I find that there is a direct correlation between cost and quality. So when buying stuff, I buy the most expensive item from the cheapest supplier. I have found the extra cost is rewarded with good quality. This is still a lot cheaper than buying from a local supplier. That has been a successful approach for me.

So having selected to build a Trident 300mm, reviews indicate Formbot is a good choice. The most expensive version is the Formbot Trident R1 Pro. The cheapest supplier appears to be the official Formbot shop, not Aliexpress.

I use a 3D printer for engineering type prototypes. No production runs. Speed is not a priority. I print lights out, overnight. Print quality, strength and reliability are priorities. I only use PETG. I might use higher spec materials that the Voron can print. I would buy the Dragon standard flow option.

So here are my questions:

Are there options that I should ask Formbot to include/exclude?
Are there options that Formbot don't offer that I should include? This question is aimed specifically at the mods section of this forum and other sources (not Formbot).
