Yep, that should work. You can also run the 5V & GND along with the data line between the two NeoPixel strips. That's exactly how my Trident is set up and it works. You have to run that data wire between them anyway, why not just make it one wire run rather than two?

I’m trying to run 100 neopixels (sk6812) and was told that the Octopus wouldn’t be able to drive all of these and I would need to use a Esp32? Is this correct? And if so, where would I find information on setting this up? Many thanks
Also does the neutral line need to be linked between the Octopus and the 5v psu?
I'll have to bow to someone who knows better than I on that.
I am running about 48 NeoPixels altogether off the Octopus. 36 for the case, plus the SB (2 nozzle + 10 Rainbow Barf logo). The SB is on the NeoPixel port and the case is on the BLTouch port. I have no 5V power supply--the Pi is also running off the Octopus 5v rail via the GPIO pins. The only issue I've ever had was the Pi started throwing intermittent undervoltage errors after a couple of months. I added a second 5v wire and that cleared up.

Klipper handles up to around 200 neopixels without issue. Past that if your using led_effects you’ll need to start lowering the frame rate on your effects. With 100 of them you should be fine to run them off the octopus.
